Is there anyone who has not been touched by disease? Heart disease, cancer, and diabetes are the leading causes of death in the United States.. and they are all treatable, if not preventable, by what we eat.

In 2008, my mom was diagnosed with breast cancer. She braved the chemotherapy, double mastectomy, blood transfusions, medications, and radiation. With all of these medical procedures, not once did her doctors make a connection between her diet and her health. She passed in 2011 after a courageous battle, but I am left wondering how much longer could she have survived with an appropriate nutritional regimen? And could this cancer have been prevented if she had avoided the processed foods, sodas, tobacco, and the overwhelming amount of environmental chemicals she was surrounded with.

I have battled my own health issues. Anxiety, mild depression, chronic sinus issues, skin irritations, and inconsistent digestion have plagued me most of my life.  It's no surprise when I look back at my diet. From middle school through my mid-20s, I lived on processed and packaged sugar and carbs! Brown sugar cinnamon pop tarts, Lucky Charms, Cinnamon Toast Crunch, cinnamon raisin bread, waffles, pancakes, grilled cheese, macaroni and cheese, fast food. If I ate a vegetable it was slathered in Cheez Whiz, doused in dressing, or came out of a can.

Everything that we eat becomes a part of who we are at the deepest level.

Since beginning my studies at the Institute for Integrative Nutrition, and now that I am attending a plant-based culinary school, I have felt a difference by increasing my consumption of local, organic fruits and vegetables, choosing wild or grassfed meats, consuming beans and ancient grains, and eliminating sugar, dairy, and gluten. My digestion is now regular (and to anyone who has irregular digestion, it is a miracle!), my sinuses have cleared up, and I have seen my anxiety lessen considerably. I am now able to hear my body and make a connection between the foods I eat and the way I feel. This process didn't happen overnight. It was a gradual shift but I found the more healthy foods I ate, the more my cravings for sugar and empty carbs disappeared.

 

Food is just one part of the picture in terms of leading a balanced life. Relationships, career, love, spirituality, movement, and fun all play an important part of living your best life.
